How to make coconut butter
Coconut butter can be expensive and hard to find. The simple and cheaper solution is to make your own! It’s easy and doesn’t take very long. Coconut butter doesn’t have a set shelf life so I suggest making a decent size batch to keep in the cupboard.
Start with shredded coconut (I use about 1.5kgs when I make mine, which produces the amount in the picture above).
Turn the food processor on and slowly add the coconut in a steady stream.
Keep the food processor running for about 10 mins, stopping it ocassionally to scrap the sides down. The coconut will go through the stages of finely chopped, the oil separating out and rough butter until it turns smooth and slightly runny. This is when it will be ready to put into clean jars with a sealable lid and store.
